Vineyard: Vineyards over 50 years old.
Winemaking: Controlled fermentation in French oak barrels, followed by aging on lees for 4 months with periodic bâtonnage. Then it spends another 4 months in a concrete egg. After bottling, it rests for an additional 12 months before release.
Tasting note: Straw yellow color with golden highlights, clean and bright. On the palate, it is glyceric and unctuous, with marked acidity and persistence. Milky finish that lingers. Herbal and fennel notes give way to ripe tropical fruits with subtle hints of noble woods.
Pairing: Pairs wonderfully with dishes that complement its complexity without overpowering it, such as fatty fish (salmon, tuna), seafood, or even creamy sauce dishes. It also goes well with soft cheeses, such as Brie or Camembert.
Serving temperature: Between 10 and 12°C.
