Vineyard: 60-year-old vineyards.
Winemaking: Late harvesting allows sugars and aromas to concentrate naturally in the grapes. After a gentle pressing, an expressive must is obtained, to which high-quality wine alcohol is added to naturally stop fermentation, thus preserving the fruit’s original sweetness. The wine is slowly stabilized in tanks to maintain its varietal character, aromatic intensity, and natural structure. The result is a sweet wine with a Mediterranean soul — balanced, deep, and a faithful reflection of the potential of the Cariñena grape in its sweet form.

Nota de tast i maridatge

Tasting note: Deep garnet color with violet reflections, this mistela displays great aromatic expressiveness, dominated by notes of ripe black fruit (plums, raisins, figs, and blackberries), along with hints of licorice, sweet spices, and a subtle balsamic background. On the palate, it is dense, warm, and enveloping, with sweetness well-balanced by natural acidity and soft tannins. The finish is long and persistent, with memories of candied fruit and dark chocolate. Ideal for those seeking a sweet wine with character and complexity.
Pairing: Pairs beautifully with dark chocolate desserts, red fruit tarts, or fig and walnut cakes, where its structure and sweetness balance intense flavors. It also makes an excellent companion for aged or blue cheeses such as Cabrales or Roquefort, and is perfect to end a hearty meal or enjoy slowly as a dessert wine.
